Tomato Sandwich Week wouldn’t be complete without an entry from the king of Tomato Mayo Toast: Dan Pelosi! Dan’s guide offers a more choose-your-own-adventure approach – it provides everything you need to create the tomato toast of your dreams.
As I’ve made abundantly clear this week, I prefer my tomato sandwich bread toasted, and Dan’s olive oil-fried toast is the best way to do so!
I had a little pistachio pesto leftover from a recipe I’ve been working on, so I combined that with mayo (like Dan, I’m a Duke’s girl) and topped it with salted heirloom tomatoes. Adding a little heat with some red pepper flakes makes it even better.
Dan’s guide is the perfect tool to help you on your journey to your ideal tomato sandwich
