I’m counting down to Ina’s memoir release by sharing one favorite recipe daily from each of her 13 cookbooks!

Ina’s next cookbook is a particular favorite, Barefoot at Home – and one of the standout recipes is Ina’s iconic Coconut Cake! It proves Ina is a benevolent queen  as the people asked for a recipe transforming her famous cupcakes into cake form and Ina provided!

This recipe doesn’t skimp on butter, using three sticks in the cake and another two in the frosting. The result? A moist, flavorful sponge topped with an extra creamy cream cheese frosting.

While my attempt at recreating this cake was a bit wonky (it was challenging to get the slices to stand up straight), it was still absolutely delicious!

Next time I make this, I’m going to toast the coconut before covering the cake – I love the color  contrast on the cake and toasted coconut is always better IMHO!
