Ina’s Baked Farro & Butternut Squash

Moving on to Make it Ahead and Ina’s Baked Farro and Butternut Squash – one of the very first Ina recipes I made (#22 to be exact) and a dish that’s made it to many “Best of Ina” lists.

While I often talk about my love for this dish and my slight obsession with farro, I haven’t made this often. Each time I do, though, I question why I’ve waited so long.  

It’s a comforting bowl and a warm hug of a dish – the farro is cooked with sauteed onions, chicken stock, and thyme, topped with butternut squash, and simmered until the farro is cooked through and the butternut squash is tender.

The final addition is a sprinkling of crispy bacon and shredded parmesan cheese.

It’s such a simple recipe that’s hearty enough to serve as a dinner main but also works well as a side.
