One of my favorites from Ina’s latest book, Go-To Dinners, is her Fresh Berry & Mascarpone Tart!! My husband raves about it for days every time I make it.
What’s not to love? A pressed-in shortbread crust, baked until golden brown, is topped with a slightly sweet, luscious mascarpone cream featuring hints of Grand Marnier, Cognac, and vanilla. The finishing touch is a colorful array of fresh strawberries, raspberries, and blueberries!
I can never pass up shortbread and a pressed-in crust is so much less intimidating than pastry dough – it’s the perfect vehicle for the berries in cream.
I first made this tart a year ago, and it has already graced our table at least four or five times.
