After this week, all I’ve been craving is comfort food. I’ve been eyeing Dan Pelosi’s Gigantic Meatballs and Marinara recipe for years, wondering if I’d enjoy the addition of raisins and mint (two things I’m only slowly learning to like in food).
I finally channeled my inner Bimpy and gave these behemoths a shot. In addition to the mint and raisins, these pork and beef meatballs contain the usual suspects – breadcrumbs, basil, parmesan, eggs – and are browned then simmered in his homemade marinara until cooked through.
One bite and I was hooked – I should have known I could trust Dan!
The tender meat is perfectly balanced by subtle sweetness from the raisins and a bright, fresh note from the mint. The perfect Sunday dinner dish!
