The exciting book releases just keep coming – Happy Pub Day, Casey! Ever since I first heard about What Can I Bring, I’ve been counting down the days. It’s such a clever cookbook concept, especially since I’m always looking for dishes that travel well for potlucks.
To celebrate, I made a version of one of my favorite summer sides: Perfect Pasta Salad. The recipe offers three tempting sauces: spicy tomato, Italian-sub inspired, and (my choice) pesto. You toss some of the sauce with the warm pasta to really infuse the flavor. Once cooled, you add the remaining sauce along with fresh basil, parsley, Kalamata olives, salami, mozzarella, banana peppers, and Parmesan. The banana peppers add just the right spicy zing.
Alex even popped a bowl into the microwave to see how it tasted warm, and we can confirm it’s equally delicious hot or cold! With summer cookouts, BBQs, and potlucks just around the corner, I have a feeling this cookbook will quickly become my go-to.
