Admittedly, picking out Ina’s best grilling recipes may seem odd coming from a person who doesn’t have an outdoor grill and had to adapt nearly all these recipes to work on a stovetop, in the oven, or under the broiler. But with summer officially kicking off this weekend I know you’re probably looking for delicious recipes for your cookout so you can take advantage of the (hopefully) nice weather! Below I share my favorite recipes for the grill from classic Memorial Day treats like Niman Ranch Burgers with Caramelized Onions and Townline’s BBQ Pork Ribs to new favorites such as Grilled Peaches with Amaretti and Grilled Oysters with Lemon Dill Butter. Of the rib recipes from Ina’s books and show, this one is my favorite. The key is the layers of flavor starting with a rub made of paprika, salt, sugar, mustard powder, chili powder, cumin, pepper, garlic powder and cayenne. After an hour on the grill, you start slathering with the very sweet, spicy BBQ sauce that’s been combined with a mop sauce. Yum!

NIMAN RANCH BURGERS WITH CARAMELIZED ONIONS

With two simple additions, these instantly became my go-to burgers. Toasted English muffins turn out to be the perfect vehicle for a burger with plenty of nooks and crannies to soak up all the tasty flavors! And the sherry wine vinegar/thyme caramelized onions were a divine and flavorful topper. A smear of good mayo and a piece of lettuce and you have a simple burger that’s astonishingly good!
