With the first real chill in the air, it felt like the perfect time to revisit Ina Garten’s Provençal Vegetable Soup with Pistou.
This cozy, deeply flavorful soup from southern France is packed with tender potatoes, leeks, onions, carrots, haricots verts, and pasta simmered in a fragrant saffron-tinged broth.
But the real magic comes from the pistou – a Provençal cousin of pesto made with garlic, tomato paste, basil, Parmesan, and olive oil. Some gets stirred into the pot, giving the broth this gorgeous hue, while the rest is dolloped on top of each bowl with an extra sprinkle of Parmesan.
