Missed the memo that I should have been making Ina’s viral brownie pudding – but Eric Kim’s Gochujang Chocolate Lava Cakes from Korean American absolutely count, right?

Eric first convinced me that gochujang belongs in dessert with his phenomenal gochujang caramel cookies, so I had a strong feeling I’d love this one too when I finally made it a couple weeks ago. 

It’s such a simple addition, but the gochujang adds real complexity and a gentle, lingering sweet heat that pairs beautifully with bittersweet chocolate. Beyond that, the recipe couldn’t be more straightforward: eggs, olive oil, vanilla, and chocolate, baked in individual ramekins until set on top and irresistibly gooey in the center.

Do not skip the optional finishing dusting of powdered sugar and gochugaru – it’s the perfect sweet-heat note for this deceptively simple dessert.
