We’re revisiting an Ina Garten classic: Parmesan Chicken – a simple dinner that’s earned its revered status since first appearing in Family Style more than 20 years ago.
Thinly pounded chicken breasts are dredged in flour, dipped in egg, then coated in seasoned bread crumbs and Parmesan. They’re pan-fried in a mix of butter and olive oil: butter for flavor, oil for a higher smoke point. The result is crisp, golden, and tender inside (exactly what you want from a breaded cutlet).
To balance the richness, Ina serves it with an arugula salad tossed in her simplest lemon vinaigrette: lemon juice, olive oil, salt, and pepper. Peppery greens, bright acid, and crunchy chicken are all I need in life.
Breading stations are always a little messy (at least in my kitchen), but despite the mess, this one comes together easily enough for a weeknight, and feels just special enough to keep in regular rotation.
