Rumor has it there’s an important foosball game this weekend! Which means it’s time for our annual viewing of Beyoncé’s Homecoming.
Kickoff is at 6:30p EST – and for the full experience, pause the show at 1 hour 8 minutes 26 seconds, switch over to YouTube, and watch a double feature of Beyoncé’s 2013 and 2016 Super Bowl Halftime Shows.
Head over to the blog (link in my bio) where I share my favorite Ina snacks perfect for enjoying Bey’s epic performance … and if you’re watching the Super Bowl instead, I’m sure these options would be great for that as well.😉
You ready, Bey? Let’s go!
Fresh Crab Nachos | Modern Comfort Food, page 44 (Recipe)
Talk about turning the volume up! Our “clean out the fridge” nachos have nothing on this decadent, delicious snack. A creamy, crab mixture is layered with tortilla chips, extra sharp cheddar, Monterey jack, pickled onions and topped with fresh onion, tomato, lime, and avocado! You had me at hello.
Kielbasa with Mustard Dip | Modern Comfort Food, page 48 (Recipe)
Did you get a last-minute invite to your Homecoming viewing? This is the app for you. Seared kielbasa with a Dijon mayo – you’ll be in and out of the kitchen in under 10 minutes.
Buffalo Chicken Wings | Family Style, page 36 (Recipe)
What would this list be without including buffalo chicken wings?! If you’re going the usual route, these crispy little guys are for you. If you want to change things up, I’d recommend Jessie YuChen’s Hot Honey Wings.
Soppressata and Cheese Puff Pastry | How Easy Is That, page 70 (Recipe)
One of the first Ina recipes I made and still a favorite. It could not be easier and everyone will thinks you spent the day slaving away in the kitchen. Store-bought puff pastry to the rescue! Love how I used to add pictures of animals to the dish if I didn’t think the photo was great!?!
Roasted Eggplant Caponata | How Easy Is That, page 38 (Recipe)
I’d never had a caponata before making this and was won over with one bite. On a night when dishes can skew on the heavier side, this is a great healthy dip that doesn’t skimp on flavor.
Spicy Pimento Cheese Spread | Modern Comfort Food, page 51 (Recipe)
We are absolutely obsessed with this spread. It is the perfect balance of creamy and spicy – the pickled jalapenos are the trick! As I mentioned in the post, I recommend you make mouthwatering grilled cheese sandwiches using this!
Sausage & Mushroom Strudels | Cook Like A Pro, page 34 (Recipe)
Sure, phyllo dough can be annoying to work with, but when the results are this mouthwatering, how can you resist?
Smoked Salmon Quesadillas | Go-To Dinners, page 34 (Recipe not online)
Looking for a twist on the classic quesadilla? This flavor-packed version is a must!
Baked Fontina | How Easy Is That, page 97 (Recipe)
Melty herbed cheese and toasted baguettes – say no more!
Guacamole and Chili Tortilla Chips | Barefoot Contessa Cookbook, page 50 (Recipe) and Foolproof, page 45 (Recipe)
If you carry hot sauce in your bag (swag) you can add it to Ina’s classic guacamole. This chunky version has just the right amount of kick and is perfect with the chili tortilla chips.
Pan-Fried Onion Dip | Barefoot Contessa Cookbook, page 53 (Recipe)
OMG, this one is delicious! Growing up I adored French onion dip with crispy potato chips and this reminds me of that but oh-so-much better! Don’t skip this one.
Warm Spinach & Artichoke Dip | Modern Comfort Food, page 43 (Recipe)
Ina’s take on this classic party staple – how could you go wrong?
Brussels Sprouts Pizza Carbonara | Modern Comfort Food, page 129 (Recipe)
Why not change up the usual pizza and make this phenomenal pizza carbonara. You don’t even need to make your own pizza dough – store-bought is fine!
Anna’s Tomato Tart | Cooking for Jeffrey, page 79 (Recipe)
Another alternative to your traditional pizza! Sure tomatoes aren’t amazing this time of year, but my favorite tip is roasting them to concentrate their flavor. Add cheese and a tart crust and you’ve won me over!
Ham & Leek Empanadas | Make It Ahead, page 70 (Recipe)
One of my all-time favorite snacks – made easier, again, by using puff pastry! These are packed with all kinds of tasty ingredients like smoked ham, gruyere, leeks, spinach, basil, and parmesan. While delicious on their own, I always serve them with a spicy aji dipping sauce and everyone goes wild!
Crab Cakes with Rémoulade Sauce | The Barefoot Contessa Cookbook, page 44 (Recipe)
I love a crab cake – and this is my go-to version! If you are a Maryland crab cake purist, look the other way – as fans of those seem to scoff at the number of ingredients in these. But I love them and the remoulade sauce is delish.
And if you’re looking for a themed drink to tie it all together, try my Master Cleanse Lemon Drop Cocktail!
