If you’re planning a Father’s Day dinner, date night, or any meal where steak gets to be the main event, Ina Garten has you covered. After cooking my way through all 1,300+ of her recipes, I can confirm she has a steak for every mood: classic grilled New York strip, filet mignon with mustard cream sauce, bistro-style steak with herby butter, steak salad, steak sandwiches, and more.
I did not start this project as a confident steak person. My early attempts were dry, overcooked, and frankly disrespectful to beef. But Ina helped me get there, one thermometer, cast-iron skillet, and very good sauce at a time.
What I Learned Cooking Ina Garten’s Steak Recipes
If Ina taught me anything about steak, it’s that confidence is nice, but a thermometer is better. A few things I learned the hard way:
- First, steak needs more seasoning than nervous people think. A generous amount of salt, pepper, and the right rub makes all the difference.
- Second, resting matters. I know, I know. Everyone says this. But cutting into a steak the second it leaves the pan is a kitchen crime.
- Third, sauces are where Ina really shines. Mustard cream, Roquefort chive, Provençal butter, bearnaise: these are the things that make dinner feel special
- And finally, a grill is great, but you absolutely do not need one for a great Ina steak dinner. Some of her best steak recipes happen in a cast-iron skillet, which is excellent news for anyone without outdoor space. And even the grilled steaks can easily be adapted.

Grilled New York Strip Steaks

A New York Strip steak is one of my favorite cuts and the rub Ina’s created for this is the only one I need in life – sweet, spicy perfection. Such a simple way to make an astounding steak.
Filet Mignon with Mustard & Mushrooms
Best for: Date night, cozy dinner, no-grill steak

Ina loves a mustard cream sauce (she has ones for fish and chicken as well) and I can understand why! The mushrooms add some extra umami to the steak and sauce.
French Bistro Steaks with Provencal Butter
Best for: Bistro-at-home dinner

Hanger steak used to be a favorite, but I often struggled to find the cut. The butter packed with herbs makes this one special!
Grilled Steak & Arugula
Best for: A lighter steak dinner

Steak with Bearnaise Sauce

This was one of the first steaks of the project and my note in my spreadsheet after making it confirms that: “learn how to cook steak”. In the intervening 7 years, I’ve done that and more. While I was working on my steak-cooking techniques, this bearnaise sauce came out perfectly.
Grilled Porterhouse Steak with Rosemary & Fennel
Best for: Impressing your guests

The latest Ina steak offering is phenomenal – the dry-aged porterhouse was a little out of my price range, but the olive oil infused with garlic, rosemary, and fennel is great on any cut of steak.
