Between the crisp shell, airy choux, and silky filling, it was pure dessert magic – and the perfect way to ring in a new decade.

This decadent dessert, we discovered during a 2022 Scotland trip, perfectly balances sweetness while providing a delicious companion to award night.
It took me three years into the project to work up the courage to finally make this, and while it takes some time to pull together, it’s much easier than expected! This show-stopping dessert consists of four primary elements: meringue islands, a pool crème anglaise, drizzling of caramel, and finally a sprinkling of almond praline.
