363. Garlic & Herb Roasted Shrimp

After falling in love with the Barefoot Contessa show in 2011 (I knnnnooooww, I was very late to the game),  Baked Shrimp Scampi was the first Ina dish I ever attempted. And 360 recipes later it’s still one of my favorites. This recipe shares many of the same ingredients — minus the panko, wine and shallots — but feels a lot quicker to pull together. The toasted country bread was the perfect way to make sure we didn’t waste any of the delicious buttery sauce!

The recipe calls for 2 lbs of shrimp, but since I was only cooking for two people I cut it in half. I don’t love leftover shrimp — it always seems rubbery when you reheat it. If you do cut the recipe, make sure you adjust the pan size accordingly.
