There are several dishes of Ina’s that I’ve been staring down for two years now, not looking forward to making them at all – Pear & Parsnip Gratin was one of them.
I’m just not a huge fan of parsnips. I don’t mind when it plays a small role in the dish, but never want it to be the star. And a gratin without cheese or bread crumbs?!?! While I had my apprehension about parsnips, I’m a big fan of all the other ingredients in this dish: sour cream, eggs, ginger, orange zest, and Bosc pears.
It’s an easy dish to pull together, you simply steam the diced parsnips and pears, puree, add the remaining ingredients and bake. And it actually wasn’t as bad as I thought it would be. I’ll likely not make it again, but if you’re a parsnip fan I would definitely recommend this.
