397. Roast Chicken with Radishes

When Cooking for Jeffrey was announced, you knew that there were going to be a least one delicious roast chicken recipe. And Ina didn’t disappoint!

Her Skillet-Roasted Lemon Chicken was the first recipe I tried and it was to die for. I’m not sure why it took me so long to try her Roasted Chicken with Radishes, but I’m happy I finally did!

Ina says heirloom radishes are preferable, but that you can use regular. After looking at three grocery stores in NYC, I decided to go with regular (although I was able to find a black radish to add to the mix).

As with many of her chicken recipes, the chicken is stuffed with lemon and thyme. Then you simply add the radishes to the pan, brush everything with melted butter, salt and pepper, bake at 425 degrees for an hour and fifteen minutes.  And dinner is served!

Who knew that radishes could be so delicious roasted!?!
