403. Company Pot Roast

With the two-year mark of this project quickly approaching, I decided to get my friends together for a little brunch celebration this past weekend. Instead of a light brunch, I decided to lean in and have a hearty Fall feast. The centerpiece was Ina’s Company Pot Roast!

The pot roasts I’ve made in the past have all been in a slow cooker, so this was my first attempt in the oven … and my first tomato-based sauce. And I have to say, I’m won over. The beef was so tender and the savory sauce I could pour on everything.

This makes a TON of sauce, so I boiled some pasta and made this into a couple other meals once the beef was finished!
