418. Scallion Cream Cheese

Halloween is one of my absolute favorite holidays. And typically the best night to see costumes (and show off your own) in NYC is the Saturday before Oct 31st. I had several Halloween and birthday parties to go to on last night, so I planned breakfast ahead of time knowing that I likely wouldn’t have the energy to cook.

Yesterday afternoon I whipped up Ina’s Scallion Cream Cheese — it’s as easy as mixing milk, scallions, salt and cream cheese. Ina recommends using a food processor to mix, but I like big chunks of scallion, so used my KitchenAid.

I couldn’t waste this delicious spread on a grocery-store-packaged bagel, so finally took the 10 minute walk to Bo’s Bagels on 116th Street. This bagel shop opened sometime in the last year, and I always noticed it while riding the bus because it has a huge bagel dangling in the front window. Guys, these are how bagels were meant to be — crunchy exterior, soft inside, in a word: HEAVEN.

To round out breakfast, I made Ina’s Perfect Cup of Coffee and sipped it out of my newly acquired Barefoot Contessa mug!
