417. Salmon with Lentils

With the holiday binge fast approaching, I’m trying to eat healthy whenever I can.  This usually leads to eating a lot of salad with vinaigrette  – the problem being that I’m usually starving 20 minutes after eating a salad. So I’m excited for hearty, healthy dishes like Ina’s Salmon with Lentils in Barefoot in Paris.

While it does involve a lot of prep time (you need to cut up onions, leeks, carrots, celery, and garlic) it’s well worth the effort.

And I love how easy the salmon is to prepare. Once you rub olive oil and sprinkle it with salt and pepper, you place it in a very hot pan for 4 minutes to sear it. You then flip it and stick it in the oven to finish it off. The crispy skin in so flavorful.
