Leftovers
  • After 2 days of leftovers, I couldn’t eat any more lasagna so I scraped out the bechamel, parmesan, and mushrooms, warmed that in the pan, smeared it on toast and topped them with a fried egg – a meatless croque-madame!
Tips 
  • I had some leftover thyme and shallots, so I sauteed them with the mushrooms because I love the flavor combo.
  • If you’re not a huge fan of nutmeg, cut the amount as it’s a really strong flavor in the final dish.
