Growing up, one of my favorite summer treats was a Pie-Iron Pizza cooked over a campfire!
It’s simplicity at its best – just marinara, mozzarella, and pepperoni sandwiched between two slices of buttered white bread secured in a pie iron and cooked in the fire until golden brown with melty cheese.
Each summer, I dream about these pizza pies and lament that New York City campfires are hard to come by. Sure, I could have made one with a panini press or a skillet, but it’s not the same!
Earlier this year, I saw @jamesyworld using a stovetop pie iron (this is the one I bought) with a shorter handle to make @kierawrr‘s version of the pizza and ordered one immediately!
I’m now enjoying this childhood favorite on the regular while scaring Alex with campfire stories like “Johnny I Want My Liver” IYKYK

Stovetop Arrabiata Pie Iron Pizzas
- Total Time: 15 minutes
- Yield: 1 pie iron pizza 1x
Ingredients
- 2 tablespoons salted butter, at room temperature
- 2 slices white bread
- 4 tablespoons Arrabbiata sauce, preferably Rao’s
- Crushed red pepper flakes (optional)
- 1/2 cup shredded mozzarella cheese
- Pepperoni slices
Instructions
- Spread 1 tablespoon unsalted butter on one side of 2 slices white bread. Flip over and spread 2 tablespoons of arrabbiata sauce on each slice and sprinkle with crushed red pepper flakes (if using).
- Place one slice, butter side down, in the pie iron. Top with 1/4 cup shredded mozzarella cheese, your desired number of pepperoni, and then the other 1/4 cup shredded mozzarella cheese.
- Place the second slice of bread on top, butter side up. Close the pie iron and latch.
- Place pie iron on a stovetop burner over medium heat. After two minutes, flip and open to check doneness. If golden brown, close and latch and cook the other side of the sandwich for another 2 minutes.
- Unlatch and open to check on sandwich, it should be golden brown with the cheese thoroughly melted. If not continue cooking checking every 30 seconds until done.
- Serve immediately. I sometimes warm the extra arrabbiata sauce to dip the sandwich in!
