As our move is just a little over a week away, I’m making an effort not to purchase any additional ingredients that won’t be used before we leave – even better if I get to use up ingredients I already have, and I just so happened to have everything on hand to make Eric Kim’s Gochujang Buttered Noodles!
The sauce is a tasty blend of butter, garlic, gochujang, honey, and sherry vinegar lending a sweet and spicy punch to the simply prepared noodles. A final touch of cilantro (or scallions) completes the dish.
While this serves 4, Eric also provides instructions to scale this down to a single serving – because sometimes you just need a little solitary noodle moment all to yourself!
