I saved the recipe for Bimpy’s Escarole & Beans when Dan first posted it years ago I only recently got around to trying it for myself. It truly is simplicity at its best and comes together in under 15 minutes!

You start by blooming garlic, fennel seed, and crushed red pepper flakes in oil before adding blanched escarole, cannellini beans, and chicken stock. This mixture is simmered to allow the flavors to meld and then you’re ready to eat.

It’s a cozy, nourishing dish that’s perfect for those busy weeknights when you crave flavor without spending hours in the kitchen.
