I’m counting down to Ina’s memoir release by sharing one favorite recipe daily from each of her 13 cookbooks!

A fried chicken sandwich is my happy place. Since I don’t love frying at home, Popeye’s usually satisfies my craving. That being said, I’ll make an exception for Ina’s  Fried Chicken Sandwiches from Cook Like A Pro which may be my all-time favorite version, whether homemade or from a restaurant.

Her take is based on Shake Shack’s Chick’n Shack (a favorite before the quality started to plummet).

How can you go wrong with this dreamy sandwich – juicy chicken breasts coated in crunchy, spicy breading + Boston lettuce + dill pickles + out-of-this-world herbed buttermilk mayo, sandwiched between two pillowy potato buns?!?

I was proud of myself for actually remembering to marinate the chicken overnight!

After marinating the chicken  in buttermilk infused with shallot, garlic, and jalapeno, you double batter (seasoned with smoked paprika, cayenne and celery salt) the chicken and fry. You can make the buttermilk ranch ahead of time, so once the chicken is fried, you can quickly assemble the sandwich and dig in!
