Mom’s Easy Meatloaf

I first shared this recipe after mentioning that my Mom’s meatloaf remained my favorite, even after trying Ina’s individual meat loaves. Doesn’t everyone who loves meatloaf think their mom’s is the best?

There are no surprising ingredients in this recipe, and that’s what makes it so good! It’s a hearty, satisfying comfort food that I’ve enjoyed for nearly four decades.

While it’s delicious when I make it, it’s always better when my mom does!

Mom’s Easy Meatloaf

Ingredients

Scale
  • 1 1/2 pounds ground beef, preferably 80/20
  • 1 cup dried breadcrumbs
  • 1 1/4 cup whole milk
  • 1 large egg, beaten
  • 1/4 cup minced onion
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon celery salt
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon dry mustard
  • 1 tablespoon Worcestershire sauce

For the glaze:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 2 teaspoons Dijon mustard

Instructions

  1. Preheat oven to 350 degrees
  2. In a large bowl, combine 1 1/2 pounds ground beef, 1 cup dried breadcrumbs, 1 1/4 cup whole milk, 1 beaten egg, 1/4 cup minced onion. 1 1/4 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon celery salt, 1/4 teaspoon garlic salt, 1/4 teaspoon dry mustard, and 1 tablespoon Worcestershire sauce and gently mix using a fork. Place the mixture in an ungreased 9x5x3 inch loaf pan.
  3. In a small bowl, mix the 1/2 cup ketchup, 2 tablespoons brown sugar, and 2 teaspoons Dijon mustard until thoughouly combined. Spread evenly over the meatloaf.
  4. Bake for 1 1/4 hours or until a thermometer inserted into the center reads 160 degrees.
  5. Rest for 10 minutes, then slice and serve.
