These juicy, pan-fried beef and lamb kofta are packed with onion, garlic, parsley, and cilantro, then served atop a vibrant green sauce—a bold purée of pistachios, parsley, arugula, and lemon.

At first, I questioned the chunks of lemon in the sauce, but that bright, acidic hit perfectly cuts through the richness of the meat. I don’t often call meatballs a showstopper, but these absolutely are!
