Stella Park’s Dark Chocolate Cream Pie

It’s one of my favorite holidays of the year: Pi(e) Day! HR didn’t agree with me that we should have the day off 😭

We’re celebrating with Stella Parks’ Dark Chocolate Cream Pie – a homemade all-butter crust filled with lush dark chocolate pudding and topped with a massive mound of swirled meringue.

The double chocolate pudding is phenomenal with the Ina-approved addition of espresso powder to bring out that chocolate flavor.

While this was a showstopper, once cut the slices didn’t really hold together, and for me, the pudding combined with the meringue was a touch too sweet. I think I’ll stick with lightly sweetened whipped cream for my cream pies and save the meringues for lemon pie!
