Ina Garten’s Israeli Vegetable Salad was recipe #760 of the project, and it’s still one of my all-time favorites!  I’ll take a hearty vegetable salad over a leafy green one any day – and this one makes the most of peak tomato season!

It starts with a generous bed of Ina’s garlicky hummus (with a subtle Sriracha kick), that gets piled high with colorful heirloom cherry tomatoes, crisp red pepper, cool cucumbers, and sharp red onion. Fresh julienned mint and a bright lemon vinaigrette tie it all together.

Serve it with warm pita or crunchy crackers, and you’ve got a healthy, no-cook recipe that’s a perfect no-cook dish for hot summer days or an effortless way to kick off your dinner party!
