I rarely stray from my mom’s meatloaf – it’s simple, nostalgic, and my ultimate comfort food. But if I do cheat, it’s with Ina Garten’s 1770 House Meatloaf with Garlic Sauce.

This version is rich and classic: a pound each of ground beef, veal, and pork (I usually halve it for the two of us), mixed with milk, eggs, celery, and onion, plus plenty of fresh chives, parsley, and thyme. The loaf is free-formed instead of baked in a pan.

But what really makes this one unforgettable is the garlic sauce. Ten whole cloves simmer slowly in olive oil until lightly golden, then get mashed with chicken stock and melted butter into the most mouthwatering sauce. I cut the meatloaf in half … but I always make the full batch of sauce.
