Every Saturday, I fail to take advantage of the Down to Earth Farmers Market just a short walk from my apartment in Morningside Park . I walked by this past weekend, saw some glorious-looking tomatoes and immediately knew Ina’s Farm Stand Pasta Sauce was going to be on the menu this week.
I stopped buying jarred sauce a couple of years ago (Rao’s sauce is the one exception!) after finding Ina’s simple marinara sauce. It doesn’t take much time and the flavor is 1,000x better than most store-bought sauces.

I love this new version which uses fresh tomatoes and adds a mirepoix, basil and, for a little kick, crushed red pepper flakes. You simmer this for an hour, so it does take longer to make, but beleive me it’s worth the wait. It’s even better the next day!
