September 4 is one of my favorite birthday celebrations of the year – not only is in Queen Bey’s birthday, but it’s also one of my best friends/roommate’s birthday as well!
This year I gave her the list of Ina’s desserts and had her pick what she wanted for the birthday celebration. She narrowed it down to Ina’s Frozen Hot Chocolate and what she ultimately chose, Ina’s Chocolate Espresso Cheesecake with Ganache.
I’ve never made a cheesecake before, 1) it’s a little inimidating if you’ve never attempted and 2) I never thought it could live up to my Grandma’s. Well this recipe gave my Grandma a run for her money, but how can you go wrong with chocolate, espresso, cream cheese and ganache!
The cake did crack while it was baking, which sent me into a mini panic attack, but with a little help from The Cake Spy blog, I was able to patch the crack. Then instead of drizzling the Ganche, I pour in the center to cover my handy work up. Shhhhhh — That’ll be our little secret 😉
