388. Smoked Salmon Pizza

I didn’t discover smoked salmon until moving to the city  ( I had no clue what I was missing!)  Nothing beats an everything bagel, with cream cheese, onion, tomato and capers on a Sunday morning with coffee. OK, maybe a sausage, egg and cheese bagel on hungover Sunday morning.

So I’m thrilled to have an elevated version that I can serve as an appetizer or lunch with a salad. The chive/mascarpone spread is delish and simply whipped together.

If you’re really looking to cut down on time, you could purchase the pizza dough from the store. I think the hardest part was pressing the dough balls into a a circle — there has to be a trick for that!
