412. Roasted Shrimp Salad

This week at work is a little crazy, which unfortunately means I don’t have a ton of time to cook. Luckily, Ina has quick recipes like this Roasted Shrimp Salad to get me through!

All you do is roast the shrimp for 6 to 8 minutes. Once they’ve cooled, you mix them with a sauce made of mayonnaise, orange zest and juice, white wine vinegar, dill, capers, and red onion and you’re done. The orange was surprisingly good. I ate this on toasted whole nut wheat bread, but this would also be great on a bed of arugula.

Two and half days until I can bake and cook all weekend!!!!
