Tip
- If you really want to use vanilla sugar, remember to put vanilla beans in sugar 3 months before you’re making this dish 😉 Seriously.
- The recipe calls for amaretti cookies, but I used almond cookies from Whole Foods
- Make sure your peaches aren’t too ripe, I saw a number of comments saying their peaches fell apart in the oven
- I used Mount Gay Dark Rum and Disaronno

Leftovers
- With the leftover rum make Ina’s Dark Rum Southsides
- Toss peaches, ice cream, rum, almond liqueur and milk in a blender and make boozy milkshakes.
