As Alex doesn’t like salmon, I took advantage of him being out of the apartment to make James Park’s Panko-Crusted Baked Salmon and honestly Alex doesn’t know what he missed out on!
The salmon fillets are coated with a zesty chili crisp/lemon mayo and sprinkled with panko, green onions, and garlic before a sear on the stove top (to ensure crispy skin) and finished in the oven.
The flaky salmon holds it’s own against those bold flavors creating a flavorful and easy main. To round out the meal, I served roasted broccoli as I couldn’t find broccolini at the store.
