Tomato season is FINALLY here! When I’m not enjoying my daily tomato sandwich (get ready for next week!), I like to mix things up with another late summer favorite: panzanella.
Ina introduced me to the joy that is bread and tomato salad and she has three stellar versions. Another favorite is Samin Nosrat’s, which features a grated tomato and balsamic vinaigrette, really upping that tomato game.
This summer, a new contender for my favorite has entered the ring: @gabrielle_eitienne’s Country Panzanella with Watermelon Dressing! It combines two perennial summer favorites: panzanella and watermelon feta salad.
Gabrielle includes the usual suspects — toasted bread, heirloom tomatoes, cucumber, red onion, and basil— but also throws in chunks of watermelon and crumbled feta.
The vinaigrette, flavored with grated watermelon, garlic, mustard, red pepper flakes, and thyme, pulls it all together.
It’s truly summer in a bowl, and I can’t wait to make it again.
