I may sound like a broken record, but TOMATO SEASON IS OFFICIALLY HERE! Ever since Harriet the Spy introduced me to the magic of tomato sandwiches, I’ve been hooked.

This week, I’m taking you on a tomato sandwich journey, sharing all the mouthwatering versions I’ve been enjoying lately. And what better way to kick off this tasty adventure than with our queen, Ina Garten!?

For Ina’s Tomato Sandwich with Basil Mayonnaise, she infuses her heavenly mayo with garlic, basil, and a zingy hit of lemon, which is slathered on rustic country bread and topped with ripe heirloom tomatoes. Simplicity at its best.

The only change I’d make: toasting that bread! I always prefer that extra crunch with the juicy tomatoes.
