Even though I grew up obsessed with the Midwest’s answer to potato gratin, cheesy potato casserole, I waited 4 years into the project before attempting this one and my post at the time sums up my feelings:

“WHHHHHYY?!? WHY did I wait so long to try the absolute perfection that is Ina’s Potato-Fennel Gratin?! Sautéed onions and fennel, mixed with thinly sliced potatoes, heavy cream, and gruyere and baked until brown and bubbly 😍😍😍 It’s decadent, comforting and someone is going to have to come over and pry this out of my hands before I devour it all!”
