Ina’s Pasta, Pesto, and Peas

I’m counting down to the release of Ina Garten’s memoir by sharing one favorite recipe daily from each of her 13 cookbooks!

We’re going through them in chronological order, and next up is Barefoot Contessa Parties!

You know, this might be a controversial opinion, but I usually skip the pasta salad at most summer get-togethers – it usually feels like filler. That is unless it’s Ina’s Pasta, Pesto, and Peas!

Ina takes her classic pesto recipe and turns up the volume  by incorporating chopped spinach, extra Parmesan cheese (because more is always better), lemon juice to maintain the vibrant colors, and mayonnaise for added creaminess. This flavorful mixture is then tossed with bow-tie and fusilli pasta, peas, and toasted pine nuts.

I do slightly alter this one as the recipe calls for ¾ pound each of fusilli and bow-tie pasta, which leaves a tiny amount unused in each box.  So, I make the entire amount of pasta and increase all the other ingredients (other than the spinach, as it comes in a convenient 10-ounce package).
