I’m counting down to Ina’s memoir release by sharing one favorite recipe daily from each of her 13 cookbooks!

Today on our trip down memory lane, we’re revisiting Barefoot Contessa Family Style with Ina’s luxurious and decadent Chocolate Mousse!

This indulgent treat is dessert perfection. The recipe combines two types of chocolate, melted with cognac and Grand Marnier, then blended with butter and thick, luscious whipped egg yolks. Folded-in whipped egg whites and cream provide a light-as-air texture for the mousse. The results are simultaneously rich and chocolatey, yet light and pillowy.

After a chill in the fridge, you pipe on more whipped cream and serve.

I initially forgot to whip the butter into the cooled melted chocolate, but luckily averted disaster by catching my mistake just before adding the whipped egg whites and cream. If I had added the butter after these ingredients, I would have deflated all the trapped air that gives this dish its desired lightness!
