623. Pork Souvlaki with Radish Tzatziki

When Ina tells you to get the boneless pork shoulder, get the boneless pork shoulder. It took nearly a half hour of my amateur hacking to skin and de-bone mine, and I may currently be suffering from PTSD. Luckily, when it all came together it was worth the effort (but seriously buy the boneless!!)  I really enjoyed the twist on tzatziki with radish replacing the cucumber.
