A couple months ago, I spotted a video of Arayes – Lebanese Meat Stuffed Crispy, and could not stop dreaming about making them – it didn’t help that after learning about them I started seeing them all over Instagram.
With all those options, I wasn’t sure which version to make, but as @recipetineats has always been reliable, I decided to make her version – and, I think, I have a new obsession!
To make, pitas are stuffed with a mixture of ground meat (lamb or beef) onion, parsley, coriander, cumin, paprika, allspice, and cayenne, then pan-fried in a skillet.
I found that my pitas didn’t quite crisp up as expected, possibly because the pitas were too thin or the meat too fatty. Despite this, I couldn’t resist devouring a stack of them!
The flavor was incredible, especially when dipped in garlic/lemon/tahini-infused yogurt. I’ll definitely be attempting these again!
