Revisiting one of my all-time favorite Ina recipes: Split Pea Soup with Crispy Kielbasa! While I remember liking Parker’s split pea soup from the Barefoot Contessa Cookbook, this, THIS I could not get enough of! Every time I make it, I can’t stop myself from eating cold spoonfuls of it out of the fridge!
Ina takes a base of leeks, yellow onion, carrots, and garlic, throws in split peas, chicken stock, a ham hock, and thyme, and simmers for 1.25 hours, resulting in soup perfection.
The crispy kielbasa was a delicious addition, but the soup is so phenomenal on its own, it’s not a must! The addition of a ham hock really is key and takes this to the next level.
