Ina Garten’s herbed baked eggs from Barefoot in Paris have always been one of my all-time favorite recipes, so I was thrilled to discover Dan Pelosi’s spin on this classic dish: Spinach & Mushroom Baked Eggs!
His heartier version combines butter-sautéed mushrooms and fresh spinach, topped with eggs and cream before baking.
Fresh parsley, red pepper flakes, and his mouthwatering Calabrian Chili Crisps add vibrant color and a perfect kick of heat.
I serve it with his Mom’s Italian Bread recipe for soaking up every drop of that golden yolk – pinkies up, of course!
