For every 100th recipe, I try to make something I’ve been dying to try or that looks like a challenge. I’ve known for months now that the 400th recipe was going to be Ina’s Mixed Berry Pavlova. It’s just such a beautiful dish and I’d never made meringue before.
There are three main elements to this pavlova: a meringue dish, sweet whipped cream, and the berry mixture.
Once you’ve made the meringue, you spoon it in a 9-inch circle on parchment paper on a cooking sheet. You then place it in a 180-degree oven for an hour and a half, turn the oven off and leave it in the oven for another hour. When you take it out it has a perfectly spongey interior with a thin, crisp shell.
You then make the whipped cream and spread it on top of the meringue disk. To finish it off you mix the raspberry sauce (make sure you buy seedless raspberry jam, unlike me) with the fresh berries and carefully spoon it over the top.
The finished product is pure heaven. It’s a little on the sweet side so a little bit goes a long way! This showstopper is definitely being added into the regular rotation for dinner parties!
